SCM and inventory management in foodservice

PSL are a consulting company that is interesting from a couple of OM perspectives.  First, they are on the Sunday Times list of ‘Best Small Companies to Work For’.  Second, they specialise in advising foodservice businesses on how to manage their supply chain and inventory costs.  You might ask “why is that so interesting?”.  Well, because small and mid-size the hospitality and catering operators have generally been quite slow to adopt good SCM practices.  This is partly due to the fragmentation and small scale of both the food supply sector and the hospitality sector, but also due to industry custom and practice.

The other good thing about this company is their website, and most especially their case studies about performance improvement.
